Nestled in the picturesque micro-zone of the Kakheti region, Jobava Winery boasts a sprawling 22-hectare vineyard, located in the unique Kindzmarauli microzone. Here, the renowned Georgian endemic grape varieties of Saperavi, Rkatsiteli, Kisi, and Kakhuri Mtsvane thrive. Our vines, averaging between 5 to 6 years old, embody the perfect balance of youth and maturity, ensuring the highest quality of grapes for our wines.

Situated in Eastern Georgia, specifically in the valley of Shilda within the Kvareli Municipality of the Kakheti Region, our vineyards benefit from the region’s unique terroir, contributing to the distinctive character of our wines.

Winemaking

At Jobava Winery, we are dedicated to the art of winemaking, blending classical techniques with Georgian tradition to craft exceptional wines. Our production process includes the use of both classical winemaking methods and the revered Georgian Qvevri methods, along with aging wine in premium oak barrels.

In 2022, we proudly inaugurated a cutting-edge wine facility equipped with the latest European technologies, complemented by traditional Georgian Qvevris, totaling a volume of 55,000 liters. Our state-of-the-art equipment, including Italian-made machinery and French oak barrels totaling 35,000 liters, ensures precision and excellence in every step of our winemaking journey. With an impressive yearly throughput of 1-1.2 million tons of grapes, equivalent to over 1,000,000 bottles, we strive for perfection with each vintage. Additionally, our recent installation of a bottling line capable of producing 1,000 bottles per hour underscores our commitment to innovation, ensuring we can meet the demands of our discerning customers with efficiency and precision.

At Jobava Winery, we employ four distinct winemaking techniques, each carefully selected to craft exceptional wines that reflect our commitment to quality and tradition:

Ancient Georgian Qvevri Winemaking

With roots dating back over 8,000 years, Georgian traditional winemaking, known as Qvevri, is one of the oldest wine cultures globally. Central to this technique are large clay vessels called qvevris, buried underground for fermentation and aging. Whole grapes, including skins and stems, ferment naturally with wild yeast, resulting in complex, amber-colored wines with earthy and tannic characteristics. Embracing organic and biodynamic principles further enhances the distinctiveness of our wines.

Traditional European Winemaking

Our grapes are meticulously hand-harvested and sorted to ensure only the finest fruit is used. Following crushing, the grape juice undergoes fermentation in stainless steel or concrete tanks, with precise temperature control to preserve delicate flavors. This method highlights the unique terroir of our vineyards, showcasing the influence of soil, climate, and topography on our wines.

Barrel Aging

Aging in French oak barrels adds layers of flavor, aroma, and texture to our wines. Our oak barrels are employed for both fermentation and aging, allowing for the subtle infusion of vanilla, spice, and toasted notes during fermentation. Over time, micro-oxygenation in the barrels softens and integrates tannins, while enhancing complexity.

Kakhetian Heritage Blending Method

Originating from Georgia’s Kakheti region, this unique method involves blending wine with chacha, a grape-based pomace brandy. After fermentation in qvevris, the wine is aged in oak barrels or clay vessels, where precise proportions of chacha are added. This process imbues our wines with strength, depth, and complexity, resulting in robust, full-bodied wines with intense fruit flavors and a distinctive warmth from the chacha.

Chacha-Making

In our dedication to showcasing the diverse offerings of Georgian spirits, Jobava Winery proudly introduces Chacha, a traditional grape-based pomace brandy. Scheduled to commence operations in the fall of 2023, our traditional Kakhetian Chacha distillery will be outfitted with premium Italian-made machinery, ensuring that our Chacha meets the highest standards of quality and excellence. 

Chacha, reminiscent of Italian grappa or French marc, is meticulously crafted through the distillation of grape skins, stems, and seeds leftover from winemaking. The result is a robust and crystal-clear spirit with a high alcohol content, capturing the essence of Georgian tradition in every sip. Whether savored as a digestif to conclude a meal or incorporated into a variety of cocktails, Chacha embodies the rich flavors and heritage of Georgian winemaking, offering a truly distinctive drinking experience that celebrates the depth of our cultural legacy.
